What was your first job?

It was with my mum. She was catering manager at a school in Aylesbury. She made all of the breakfasts, so I used to help out with that

What do you normally have for breakfast?

An espresso and a cigarette

What do you do to relax?

I walk my dog, Jonah, the cocker spaniel. He's a celebrity in his own right. He's even in a cookbook!

Which is your favourite restaurant?

J Sheekey, London. It's an amazing place that has kept its standards

What's your favourite hotel?

Westbury Cross House in Somerset. It's a B&B. The location is just amazing, it's family-run, and it's been refurbished to an incredible standard. They do a really lovely breakfast and I can bring the dog. It's the one place I go to relax - mainly because I can't get phone signal there

What is your favourite drink?

Beer and wine. It depends what day it is and what the weather is like. I do like craft beers

What is your favourite food/cuisine?

I love seasonal British food. Asparagus season is my favourite!

Which ingredient do you hate the most?

I loathe vanilla essence or extract. Why not just buy vanilla pods? Don't be tight!

How would you describe your desk?

I don't have a desk. I use my kitchen table, but at the minute it's got about 50 cookbooks on it. We've been brainstorming menus, so the whole team came and used my kitchen to hash things out

Which person in catering have you most admired?

Michael Caines, he's an amazing chef and a really nice guy. I have ultimate respect for someone who has that kind of accident and gets back to it

Which person gave you the greatest inspiration?

My mum. She's a very inspirational lady. And Tim Hughes, chef-director for Caprice Holdings. I was 22 when I went to work for them and as they grew, I grew with them. He really looked after me. He's a great leader
