Jonny Mills to open chef’s table restaurant in Birmingham

Jonny Mills is to open chef’s table restaurant Sǣl in Birmingham’s Jewellery Quarter next month.

Sǣl takes its name from the Old English word for gathering townsfolk to celebrate harvest and is entirely separate from Jason Atherton’s former venture, Sael in London’s St James’.

The upcoming restaurant at the Goodsyard will offer just eight seats around an intimate kitchen counter, one sitting at a time.

The tasting menu has been designed to showcase seasonal and local produce, while the complementary drinks programme, led by Asher Beardsmore, previously of the two-Michelin-starred Opheem in Birmingham, leads on a waste-conscious approach.

The opening of Sǣl follows a run of acclaimed pop-ups across south Birmingham.

It also marks Mills’ return to bricks-and-mortar restaurants following the closure of his Leamington Spa restaurant, the Tame Hare, after the pandemic.

Earlier on in his career, Mills worked for the Cross at Kenilworth and Mallory Court Country House Hotel & Spa in Warwickshire.
