The chef previously won a Michelin star at SY23 in Wales
Chef Nathan Davies has revealed plans to open a new restaurant named Vraic on the isle of Guernsey in July.
It will be the first major new project for Davies since he stepped down as head chef at Michelin-starred SY23 in Aberystwyth, Wales in late 2023.
Named after the Guernésiais word for seaweed, Vraic will serve ingredients picked, foraged and sourced from its surrounding area.
The 25-cover dining room will offer a tasting menu for both lunch and dinner with ingredients cooked over a custom-built grill in the open kitchen.
Dishes will include a fire-seared scallop served with hand-picked seaweed and a burnt butter finish, while whole sharing portions of fish and meat will be cooked on the open flame.
Guests will be able to head to an upper terrace area for pre- or post-dinner drinks with views over the island’s’ north shore.
Davies said: “It was always going to take something very special for me and my family to leave Wales, but this new project is exactly that. Vraic represents a new opportunity to create something exciting on the island of Guernsey, a truly unique and beautiful part of the world.
“This restaurant will be a progression of our journey, building on the principles we established at SY23 – utilising the abundance of ingredients on our doorstep and cooking with fire at the heart of everything we do. I’m thrilled to be joined by some of the team from SY23, and I can’t wait to share this new chapter with everyone.”
Davies launched SY23 in 2019 with owners Mark and Rhian Phillips and took the restaurant to critical acclaim, winning a Michelin star in 2022 following an appearance on the Great British Menu.
However, the restaurant permanently closed shortly after his departure due to “unprecedented challenges” of the financial climate.
