A duo of French-inspired openings, a new Wiltshire destination and a California import are among the notable openings this month
The UK has basked in – or endured – record-breaking heat this year and the summer has only just begun.
As the dining scene takes advantage of the warmer temperatures and longer days, it is due to welcome everything from a Parisian-inspired café in Chester to a Southern Californian-style neighbourhood joint in East London, serving all-day breakfast and steak and eggs.

Fairmont Hotels & Resorts has launched Fairmont Cheshire, the Mere, which marks the group’s fourth UK property. The 116-bedroom hotel sits within 157 acres of countryside and offers the Gordon Ramsay at the Mere restaurant, the Orangery, the Club Lounge, the Spa Bar and an 18-hole championship golf course.

Orry Shand, Great British Menu 2026 banquet winner, is to open his first solo restaurant this month at Bridge of Feugh, near Banchory in Royal Deeside, Aberdeenshire. The 30-cover restaurant serves two tasting menus consisting of 12 and 15 courses, starting from £150.

Barrie Henderson of Edinburgh-based vegetarian and vegan restaurant Hendersons has launched his first outpost in Glasgow in the former Seven21 site. Executive chef Anna Czapiewska, who is originally from Poland, has crafted a menu showcasing seasonal dishes and fermentation technique.

Milanese seafood restaurant Langosteria has made its UK debut within the OWO in Whitehall Place. Following Langosteria’s international launches at destinations such as Paris, Sardinia’s Porto Cervo and St Moritz, Buonocore Hospitality Group has brought the concept to London with the support of Italian designer Carlo Samarati.

Toad Bakery founders Rebecca Spaven and Oliver Costello have launched their latest site in London’s Deptford, following on from the success of their original Camberwell bakery. It will serve coffee from Catalyst, as well as several limited edition bakes in collaboration with industry favourites.

JD Wetherspoon is to open the Sir Ronald Wates at the University of Surrey’s Stag Hill campus. The 5,500 sq ft pub takes its name from Sir Ronald Wates, who founded the original building in which it resides. The opening marks the first time a UK university owns and operates a franchise under Wetherspoon.

Rohan D’Souza is to open contemporary Indian restaurant Bulbul in the City of London in partnership with Twinkle Keswani. The pair have previously launched several restaurants across India, including in Goa and the Himalayan town of Leh.

Rome-born Fabio Forin and Lisbon-raised Gonçalo Albuquerque have launched Italian and Portuguese wine bar and deli Cantina Boccone beneath the railway arches of London’s Deptford Market Yard. The 16-cover venue offers a selection of seasonal small plates ranging from cured meat boards to Portuguese sardines.

Khalil Rehman and Gul Nawaz, the team behind takeaway pizza brand Caprinos, are launching their second outpost of British hot chicken concept, Zinglet, this time in Macclesfield. Zinglet offers breaded, made-to-order hot chicken across four distinct spice levels.

City of London-based, specialty coffeehouse group Rosslyn has launched its latest site in Cheapside. The independent chain has grown from one store on Queen Victoria Street in 2018 to its ten-strong portfolio today. The business was founded by Mat Russell and James Hennebry, who met while working at Caravan Coffee Roasters.

French restaurant group La Nouvelle Garde is to open its first international outpost and 10th site in London’s Chelsea. Brasserie Olivia will serve homely interpretations of classic bistro dishes, while its downstairs speakeasy bar, Venus Bar, will welcome guests to choose their own vinyl to play on the turntables.

The team behind Northern-based independent restaurant group Maray are to open Parisian-inspired Café Barbette in Chester. Guests will explore a wine discovery wall that is home to 30 wines by the glass, an extensive cocktail list from Mark Jackson and tuck into seasonal sharing plates created by head chef Will Cole.

The former head of wine at the Michelin-starred Plates London and the founder of Australian restaurant Milk Beach have teamed up to open Bar Blondie in London’s Queen’s Park. Sommelier Alexandra Price and Sydney-born Elliot Milne will showcase a 160-bin list featuring both Old and New Age wines, as well as a selection of sharing dishes inspired by Italian and southern French cuisines.

Southern Californian-inspired Johnny Boy’s is due to open in London’s Stoke Newington, serving all-day breakfast on the weekends and dishes such as crab tostada and pastrami dip on the weekdays. The restaurant has been founded by LA-native Julian Denis, who is also behind Facing Heaven and Easy8 in London Fields.

The Beckford Group is opening Corsham House, a restaurant with rooms in the market town of Corsham, situated on the Wiltshire and Cotswold borders. The 80-cover brasserie will also offer 11 upstairs bedrooms, which are well-stocked with Bramley products in the bathrooms. Chef James Harris, who has spent the past six years as head chef of the Beckford Bottle Shop in Bath, which has held a Michelin Bib Gourmand since opening, joins the latest outpost.

Cult burger and steak restaurant Burger & Beyond is to open its first regional restaurant in Brighton, east Sussex. The burger brand was founded in 2015 by Craig Povoas and Tom Sotck as a street food concept. Brighton is its fourth restaurant and it also has a handful of counters across selected food halls.
