Noma co-founder René Redzepi returns in new role

Noma has confirmed that it will reopen in Copenhagen on August 5 following its residency in Los Angeles.

The return will see a new leadership team at the helm of the prestigious restaurant, which previously held three Michelin stars, and co-founder René Redzepi in the newly-created role of creative director.

Redzipi’s new appointment comes shortly after he announced his resignation following a New York Times investigation, which included accounts from dozens of former employees alleging “a pattern of physical punishment Mr Redzepi inflicted on his staff”.

In his new appointment, which Redzipi announced on his Instagram, he said he will be focus on food development projects, with the best innovations fed back through to the restaurant.

He said: “There’ll be work done with insects, seaweeds, legumes, fungi, and we also have a technological project that we’re working on.”

Day to day to team helming Noma will comprise of Mette Brink Søberg and head of research and development, Pablo Soto as executive head chef and Annika de Las Heras as chief executive.

In a post on its official Instagram, Noma added: “We are building toward something we have never done before: twelve seasons of Noma. Each month with its own expression, shaped by the ingredients, landscapes and ideas inspiring us in that moment.”
