NYC group behind Carbone to launch restaurant at Cambridge House hotel

The hospitality group behind New York’s Carbone restaurant has been named as the culinary partner of Auberge Collection’s upcoming luxury London hotel, Cambridge House.

Major Food Group is also behind New York’s ZZ’s Club, Torrisi Bar & Restaurant and Sadelle’s, and launched the high-profile London outpost of Carbone in the same building as the Chancery Rosewood hotel last month.

It will open Major’s Grill at Auberge Collection’s Piccadilly hotel when it launches in 2026.

The restaurant will draw inspiration from a classic London grill, offering guests the finest cuts of meat and seafood, while the extensive drinks list will feature 10 variations of a Martini.

Major Food Group was founded 10 years ago in New York by Jeff Zalaznick, Mario Carbone and Rich Torrisi and has since grown to over 50 restaurants, bars and private clubs know for their theatrical culinary experiences.

Zalaznick said: “It would be impossible to overstate what a privilege and dream come true it is for Mario, Rich, and me to have the opportunity to serve as the new culinary stewards of this storied London address. From the very beginning of our journey, MFG has proven its unmatched ability to honour the past while bringing it into the future.”

Auberge Resorts Collection was founded in 1981 and has since grown its portfolio to 28 hotels and resorts, most of which are located in North America.

Cambridge House, which is due to open in spring 2026, marks the company’s first UK opening, following its appointment by the Reuben brothers to manage the property in the former In and Out Military Club in London’s Mayfair.

The hotel is part of Reuben Brothers’ £1bn regeneration of 1.3 prime acres of the Piccadilly Estate.

Earlier this year Etienne Haro was appointed managing director of the hotel, which will offer 102 rooms, a private members’ club, a Georgian-era ballroom, an open-air jasmine courtyard, a brasserie and a double-level spa, complete with hydrotherapy facilities, two heated swimming pools, seven treatment rooms and a gym.
