Hear from speaker Matt Bell, managing director at Mollie’s. Bell will bring to life how Mollie’s use of AI has helped manage cost, compliance and confidence.
Speaking to The Caterer ahead of his appearance, Bell said Mollie’s own approach has focused on using AI behind the scenes to improve operations rather than replace guest-facing service.
The business has developed four automation workflows within its Apaleo property management system, which reconcile online travel agency reservations, correct agent and corporate booking data and resolve data quality issues.
It also uses Flyr to optimise pricing and revenue decisions, while its internal AI chatbot, Mollie, handles routine IT queries and helps employees build confidence using AI in their day-to-day roles.
He added that the best way to get employees comfortable with AI is to find two or three curious employees willing to test out AI, “and let the results do the persuading”.
Bell will be joined by Harry Wales, sales manager and workforce management strategist at Deputy, who will explore AI’s core pillars for operational efficiency in shift-based businesses.
Wales said: “Hospitality operators are facing a sharper efficiency challenge in 2026, with UKHospitality reporting that April cost increases will force 64% of businesses to cut jobs, 51% to cancel investment and 42% to reduce trading hours.
