Hong Kong-based restaurant group Aqua has launched the first of its two restaurants on top of the former Dickins & Jones department store. It offers contemporary Spanish cuisine and includes a private dining area and rooftop terrace.

Menu Modern Spanish - dishes include roast foie gras with mango confit, herb salad and melon and black tea sauce; 24-hour marinated braised ox tail with pumpkin purée; Iberian beef tenderloin with salsa Espaňola; and apple jelly and apple ice with frozen yogurt and dark chocolate nibs.
