Brasserie Zédel appoints head chef and general manager
New London restaurant Brasserie Zédel has appointed David Collard as head chef and Olivier Lavigne du Cadet as general manager.
Collard, from Reims in Champagne, has previously worked with Joël Robuchon, Michael Caines, Marcus Wareing and Gordon Ramsay (as head chef at the Michelin-starred Fleur), as well as head chef at the Langham Hotel, the Wallace Collection and Café Luc.
Lavigne du Cadet is a native of the Loire with a background in running brasseries in France, Japan and the UK. He set up restaurants for ‘Flo' in various countries, as well as managing La Coupole, then the largest restaurant in Paris, with 400 seats.
Brasserie Zédel is the latest restaurant from Rex Restaurant Associates, owners of the Wolseley and the Delaunay. Brasserie Zédel is located in what was the Regent Palace Hotel on Sherwood Street, off Piccadilly Circus, and is due to open at the end of June
Taking its inspiration from a Parisian brasserie, Zédel will offer classic brasserie fare as well as play host to a Bar Américain, the Crazy Coqs, a live music and cabaret venue, and the Zinc Café, a street-level café and wine bar.
