Bruno diFabio to open NY Fold restaurant in London

A new pizza restaurant named NY Fold, from US pizza star and television regular Bruno DiFabio, is to open in London's Soho in July.

Toppings will be based on 60-day aged mozzarella from a farm in Caserta, Italy, plus fresh tomato sauce using 12 herbs and spices. Further options will include the 'Big Daddy', made with fresh spinach, artichoke hearts, garlic, white onion, mozzarella and lemon.

The site will also serve focaccia sandwiches, fresh pasta dishes, salads, desserts and American beers.

DiFabio is working with partners and fellow New Yorkers Michael and Annabel Wheeler, and already runs 10 pizza sites across the US, including Amore Pizza and Stefano's Pizza. He has appeared on television shows such as Access Hollywood, and Chopped, on the American channel the Food Network.

He has also won the World Pizza Championships six times.
