Burgers from Ember Yard, Hixter and Brindisa on Slider Decider 2014 shortlist

Top restaurants Ember Yard, Hixter, Brindisa and L'Anima are among the 16 shortlisted for the Slider Decider final, the burger competition held by London Docklands pub, the Gun.

The final is set for 5 June, and will see each burger created from scratch, to battle for the title of Slider Decider Champion 2014.

L'Anima's creation includes a beef slider with burrata and smoked aubergine compote; Ember Yard's burger includes smoked Iberico pork cheek, guindilla marmalade, lardo, and fennel and watercress slaw and Hixster has created a burger with Glenarm Estate salt-aged butler steak.

Other entries include a creation by returning champion Jamie Thickett of Opera Tavern, whose burger includes an Iberico pork slider, lobster, dried courgette, n'duja aioli and a saffron bun; and an entry by chef Tom Anderson from Japanese restaurant Nanban (who came third last year).

His burger will feature a mince and bone marrow slider smoked in craft beer and tonkotsu broth, with craft beer cheese, chicken crackling, kewpee mayo, gochujang hispi cabbage slaw, fried fermented onions and wild garlic sauce, on a steamed craft beer bun.

The final contest will take place at 6.30pm, before a panel of judges including Channel 4 presenter Rebecca Seal, restaurant critic Tracey MacLeod, the food editor of the London Evening Standard Victoria Stewart, and editor of Restaurant magazine Stefan Chomka.

Tickets cost £15 per person, from alice@thegundocklands.com.
