Chef James Tanner launches Aryzta Food Solutions chocolate dessert

Chef James Tanner has unveiled a new ‘Inspired by' chocolate pavé dessert created in partnership with bakery specialists Aryzta Food Solutions and chocolate manufacturer Callebaut.

Launched at Chris and James Tanner's pub, the Kentish Hare, in Bidborough, Tunbridge Wells, earlier this week, the dessert which has been developed by Tanner and the two brands has been designed for pubs, restaurants, hotels and B&I catering, where consistency and quality are key requirements

The ‘Inspired by' chocolate pavé is a rich chocolate brownie base, topped with a milk chocolate praline feuilletine and chocolate truffle, decorated with chocolate mirror glaze and cacao nibs.

In his capacity as chef ambassador for Aryzta, Tanner has worked closely with the company's brigade of development chefs to design the product and chose Callebaut's 70% Ecuadorian Origin with a fruity character with notes of rum, whisky and tobacco as a base ingredient.

"I'm proud to finally bring this product to market," said Tanner.

"It's been created to work perfectly well as a finished product, but I wouldn't be a chef if I thought it couldn't benefit from a number of innovative serves and pairings. Kitchens are businesses and so offering them something that is already premium, using the finest ingredients - that can be further upsold with the addition of a few simple but well thought out elements, is key. This new product definitely meets that criteria and I can't wait for other chefs to try it."

Paul Whitely, brand & communications manager UK for Aryzta, added: "It's been fantastic to take someone for whom the professional kitchen is a second home and bring them into a manufacturing and product development environment, such as ours and that of the Callebaut team. Ideas began to flow immediately, leading to this incredible new product which we are extremely excited about."

Robert Harrison, sales director Gourmet-Northern Europe at Callebaut, commented: "It has been a pleasure to collaborate with everyone on this project from paper to plate. We're delighted with the final dessert and are looking forward to seeing it on menus."

The ‘Inspired by' chocolate pave will be available to UK foodservice as a frozen finished item.
