I don't if working. Soft-boiled eggs with soldiers on day off.

Japanese and Italian
Are there any foods/ingredients that you refuse to cook with? Rice, because I suck at cooking it.
What flavour combinations to do you detest? Chocolate and alcohol
Which person in catering have you most admired?
Tom, my senior sous. Amazing chef and great friend. We'll all be working for him one day.
Which person gave you the greatest inspiration?
Herbert Berger, formerly of One Lombard Street, London
Who would you invite to your dream dinner party? Paul Bocuse, Paolo di Canio, Otis Reading, Will Smith, The Goonies, Danny Meyer and Prince Harry to lighten the mood.
Cast away on a desert island, what luxury would you take? Sun cream! I'll burn to a crisp otherwise.

What would be your last supper? Sunday roast and steamed treacle pudding

Who would be in your "fantasy" brigade? My current brigade has given me so much dedication and success in our first year, all I'd do is add Gordon Ramsay for a laugh.
When and where was your last holiday? Oslo, Norway
What irritates you most about the industry? How judgemental it is. It's not the critic that counts… it's the man in the arena.
When did you last eat a hamburger? About a week ago, at Burger and Lobster. Seriously good.
