Around 20 years ago my mate took a good stuffing for rolling a car wheel down a fellside. The wheel hit a rock and went straight through his dad's Defender window. That was me, sorry!
What irritates you most about the industry?
Young chefs who do nothing but stage, then say "I have worked there" and expect to be a junior sous straight away

Watership Down - I was genuinely gutted when it wasn't on last Boxing Day
If you had more time, what would you do?
I would spend more time with my wife and daughter - two days isn't enough
