What was your first job? When I was nine, my brother and I created a little advertising pamphlet for local businesses

What was your first job in catering? YTS training scheme

What do you do to relax? Spend time with my kids, windsurfing or cycling

What is your favourite restaurant? Oud Sluis in Holland

What is your favourite hotel? Camino Real in Huatulco, Mexico

What is your favourite drink? Coffee

Are there any foods/ingredients that you refuse to cook with? Bad quality, inferior products

What do you always carry with you? My keys

Which person in catering have you most admired? Albert Roux

Which person gave you the greatest inspiration? John Burton Race

What daily newspaper/website do you read?The Scotsman

Describe your ultimate nightmare A long distance flight with continuous turbulence

What is your favourite food/cuisine? Seafood

When and where was your last holiday? Tenerife in April

What is your favourite prepared food product? Tortilla

When did you last eat a hamburger? Last week, in my kitchen - development for my new brasserie, the Honours
