Former Duck and Waffle executive chef Tom Cenci has partnered with restaurateur Adam White to launch neighbourhood restaurant Loyal Tavern.
The restaurant will open next month in the site of Village East in London's Bermondsey, which White launched in 2006, showcasing the best of British produce.
Cenci told The Caterer: "Village East had very much a neighbourhood feel to it, a lot of locals come here and we want to honour them - that's where the loyal name comes from. We want to remain loyal to the neighbourhood, to Bermondsey, and make it a neighbourhood restaurant, but approachable for the whole of London.
"The menu is going to be a play off British cuisine leaning towards comfort food. We're really going to champion British produce and British suppliers. we want to use the best produce available in the UK."
Dishes will include Cornish mackerel with apple, pine nut and truffle as well as venison tartar with beef dripping with daily specials such as rib of retired dairy cow or gurnard with crab bisque, carrot and seaweed.
Bar manager Antonio Del Monte will showcase seasonal botanicals in punch bowls alongside a list of natural, new world, British and international wines and a broad selection of beers.
The restaurant will have 100-covers alongside two bars and a private dining room.
