Club Gascon to expand empire

Club Gascon owners Pascal Aussignac and Vincent Labeyrie are expanding their dining empire with the transformation of their delicatessen Comptoir Gascon on Charterhouse Street in London into a restaurant.

Formerly a deli-with-tables, the site will now operate predominantly as a restaurant, serving rustic Gascon classics such as salade hollandaise and cassoulet, from September.

It will open from Monday to Saturday, with an expected average spend of around 20. Some retail space will be retained, including an area for wine sales.

Aussignac and Labeyrie also own three other venues in London - the one-Michelin-starred Club Gascon and wine bar Cellar Gascon, on West Smithfield, and Le Cercle in Chelsea.
