Reservations are now being taken for Core by Clare Smyth, which is set to open in Notting Hill, London, on 1 August.

The 54-cover restaurant, with a cocktails bar for 18 guests, is the first outlet to be opened by Smyth, winner of the Chef Award at the 2016 Cateys and the first and only female holder of three Michelin stars in the UK during her time as chef-patron at Restaurant Gordon Ramsay in Chelsea.

It intends to be a modern fine-dining restaurant with a strong British ethos, in an elegant, relaxed interior.

The food offer will concentrate on a central tasting menu with 10-12 constantly evolving dishes, from which guests can order in full or choose three or five courses. Smyth will work closely with British farmers, fishermen and artisan producers to source her ingredients.

Meanwhile, the extensive wine list, with a core selection of more than 400 fine wines and Champagnes, will be overseen by head sommelier Gareth Ferreira, a 2015 Acorn Award winner. On Monday 17 July, Ferreira will complete in the final of the Moet Sommelier of the Year 2017 competition at the Savoy hotel, London.

The interior design will centre around a colour palette of stem green, aubergine, almond milk, copper and burnished gold, with a window overlooking a feature living wall.

Smyth said: "With it being my first solo venture and very close to my heart, it wasn't easy deciding what to call the restaurant, but ‘Core' seemed right; it's a seed of something new, with strong ties to nature.

"Brought up on a farm you understand from an early age just how good our ingredients are and how important it is to support local producers. As chefs, we have access to some of the finest native produce in the world here in Britain, and I want to continue to celebrate that in every menu."

Core by Clare Smyth will be open for lunch from Thursday to Saturday and for dinner from Tuesday to Saturday.
