North-west based chef-restaurateur David Mooney (pictured, left) is to open a new restaurant in Knutsford, together with business partner Paul Newman (right).

Mooney, co-owner of the New Moon Pub Company, which also owns the Lord Binning restaurant in Cheshire, will open the Old Sessions House in August.

Housed in the former Red Cow pub, the site will undergo a £250,000 refurbishment, including new interiors and a new kitchen.

Newman said: "Knutsford is a thriving town, where quality is recognised and expected. We're excited to bring our new brand of dining experience to the area and we know it will meet the strict criteria for excellence demanded by local diners."

Mooney added: "We are diligent about using premium quality produce and where possible source products locally, as there are so many wonderful producers on our door step."

The New Moon Pub Company has also commissioned its own unique ale, which is currently being produced by the Tatton Brewery in Knutsford. Named the Usuale, it will be on sale exclusively in the Lord Binning and the Old Sessions House.

Mooney worked at Belle Epoque in Knutsford for 21 years, while Newman was a founder and director at Living Ventures.
