Dean Bonwick will return to the Roux family's the Waterside Inn in Bray to serve as assistant general manager after five years at family-run, Michelin-starred operation the Crown at Burchetts Green.
Bonwick spent half a decade at the Michelin-starred pub, which is run by father and chef Simon Bonwick, and staffed by Dean's seven siblings. Simon said: "The Waterside Inn is like another home to Dean. We have always enjoyed a special relationship with the Roux family and we know Dean will enjoy this new challenge. We share the same passion for delicious food and happy customers."
Bonwick will serve under the Waterside Inn's general manager Frédéric Poulette, having previously been employed by the legendary three-star restaurant as head waiter. Poulette said: "After having worked together for years, we know and understand each other so well. Dean has the perfect combination of energy, enthusiasm and single-minded professionalism".
Alain Roux said the restaurant is ready to "welcome Dean back with open arms" after his departure, while Michel Roux has said he will be grateful for the manager's "extraordinary attention to detail and dedication to guest experience". He added: "Dean will be a valuable asset to our team".
