Drake's at the Clock House in Ripley has appointed Thierry Sauvanot as sommelier. Sauvanot joined Michelin-starred Drake's after working at a number of top London establishments, including most recently Bjorn van der Horst's Eastside Inn. He spent seven years with the Gordon Ramsay Group at Pétrus and the Savoy Grill, and prior to that Gordon Ramsay at Claridge's. Originally from Paris, Sauvanot is a graduate of the Lycée Hôtelier Montaleau at Sucy en Brie. Before coming to the UK he worked in Paris for Joel Robuchon and Alain Passard.
