Former Gaucho MD's M Restaurants secures first site

M Restaurants, the new restaurant business founded by former Gaucho managing director Martin Williams, has secured its first site.

The business is to open on the site of what used to be La Bourse on Threadneedle Walk in the heart of the City of London and will be home to a destination cocktail bar, wine tasting space, and two ninety cover restaurants: M-Grill and M-Raw. There will also be private dining and events spaces.

M-Raw, a casual dining concept, will serve breakfast and small plates from its sashimi, salad, oyster and ceviche bars.

M-Grill, an international restaurant specialising in the "best steak cuts from across the world" will offer a single cut from six selected countries ranging from £25 to £139 in price.

The Threadneedle Walk restaurant will be the first of three initial venues, with M still in negotiations with landlords on the remaining two (undisclosed) sites. Michael Reid has been named as executive chef of the business. Currently head chef of the newly opened Jardin Tan in Melbourne, Reid is the former executive chef of Gaucho Restaurants.

Williams started the business after he left his position as managing director of Gaucho Restaurants in March this year, after nine years in the role.

"We are embracing the growing market in the city for group dining, by creating a number of very different, exciting spaces and menu offerings which cater for a diverse range of corporate entertaining needs," he said.

René Dekker, an internationally acclaimed designer, is undertaking the interior design for the site alongside Emlyn Colon, while the M-Bar concept has been designed by Lance Perkins, currently bars and beverage director of the Edition hotel, which he designed and opened nine months ago.

"I needed a team to design a multi-faceted venue that appeals to our future guests for drinking, wine tasting, both casual and destination dining and events," Williams said.

M will open in November. The deal for the site was negotiated by Restaurant Property.
