Former Noma chef and Polpo manager pop-up comes to south London

An ‘anti fine-dining, fine dining' pop-up from a former Noma chef and the former manager of Polpo and Polpetto is to open in East Dulwich, south London.

Perilla is the brainchild of head chef Ben Marks, who has worked at Noma and at Philip Howard's the Square, and Matt Emmerson, who previously managed the Italian-style Russell Norman sites.

It is set to operate for four months at the Platform 1 Wine Bar on 71 Lordship Lane in East Dulwich from 10 November and will seek to serve fine-dining-style food in an accessible, affordable and informal way.

Typical dishes will include pot roast cauliflower coated in lardo with juiced walnuts; whole-baked mackerel with marinated cucumbers; and baked custard with juiced wild plums.

There will also be an indigenous wine list, plus a menu of botanical gin cocktails created in collaboration with Hawksmoor bartender Adam McGurk.

The Platform 1 Wine Bar is run by Chloe Gounder-Forbes and seeks to invite pop-ups to open every four months or so. Perilla itself operates solely through pop-ups, and has previously appeared at sites such as Palm2 in Clapton, north London, earlier this year.
