George Kataras from M Threadneedle Street has been announced as the winner of the 2016 S.Pellegrino Young Chef 2016 regional final and will now go on to represent the UK and Ireland at the Global Final in Milan on the 13 October 2016.

The live cook-off which took place last night at the Waitrose Cookery School in Finchley, London saw Kataras go head-to-head with nine other finalists, in a fiercely fought challenge.

Kataras from M Restaurants was chosen for his winning dish "whole turbot", comprising smoked turbot sauce, cured turbot, pickled courgettes and a brilliant-yellow courgette pureé, said: "My dish was inspired by the summer and my favourite seasonal ingredients. I like to cook without any food wastage, which happens far too often in this industry! My dish included the bones and head of turbot, which adds lots of flavour to the sauces.

"To win the S.Pellegrino UK and Ireland final is a dream come true and I can't wait to perfect my dish with Claude Bosi [as my competition mentor] in the lead up to the global Milan final."

The judging panel included Claude Bosi of Hibiscus (London), Ollie Dabbous of Dabbous (London), JP McMahon of Cava Bodega (Galway) and Ross Lewis of Chapter One (Dublin).

Michelin-starred chef Bosi, explained: "The calibre of dishes presented on the night was hugely impressive, but George's dish of whole turbot stood out with its flavour, the skill involved, the beauty of the presentation and the true message behind it. I look forward to taking George to the grand final in Milan."
