Helen Vass to launch dessert pop-up restaurant
Helen Vass (pictured left), one third of the winning team of BBC2's Bake Off: Crème de la Crème, is launching a dessert pop-up restaurant in Scotland this month.
The restaurant, Dulce by Helen Vass, is believed to be the first of its kind in Glasgow. The pop-up at Studio 93 will showcase Vass's desserts inspired by her time working as a pastry chef in Barcelona and will come with wines to accompany. Helen was part of a team of three creating cakes and petit fours for Crème de la Crème, and is pastry chef at restaurant Number 16 in Glasgow.
Her menu will feature a dessert from Crème de la Crème: a raspberry, mascarpone and pistachio entremet. The desserts featured will also include a Madagascar 66.8% chocolate cremeux with olive oil ice cream and sourdough toast, and an olive oil cake with white chocolate cremeux, caramelised muesli, mandarin foam and mandarin granita
It will be open for one afternoon only on 17 July where Vass will serve the desserts and talk about them. The event also includes an amuse-bouche, coffee with macarons and a box of three handmade chocolates: white chocolate with vanilla ganache, milk chocolate salted caramel and dark chocolate with mint ganache. The afternoon costs £45 and there are only 12 spaces per sitting.
Hotel Café Royal launched in March what is believed to be the first dessert-only restaurant in a London hotel, with menus created by executive pastry chef Sarah Barber.
