Heythrop Park chefs to open Bombay street food restaurant
Two Heythrop Park chefs are set to open Bombay street food restaurant Kutting Chai in Swindon in the second week of January.
Aldred Rodrigues (pictured, left) has worked as executive chef at the 300-bedroom resort in Chipping Norton, Oxfordshire since 2014, with sous chef Ivan Martin Farre (pictured, right).
Rodrigues departs his role at the hotel tomorrow and plans to launch the restaurant next month serving chaats, meals in traditional dabbas (a meal box with five tiers) and cutting chai tea.
Farre will be running the restaurant's front of house with Rodrigues running the kitchen.
"Our vision is to share our passion for food and cooking by creating an affordable and extraordinary Bombay dining experience," said Rodrigues.
Warner Leisure Hotels acquired Heythrop Park from Firoka earlier this month, with the hotel's franchise with Crowne Plaza ending at the end of the year. The hotel will continue to operate independently with the current team in place throughout 2019. Warner intends to commence the refurbishment of the hotel in 2019, with a completion in 2020.
