Ibérica is to follow up its Leeds opening with new sites in Glasgow and Edinburgh this year.
The Spanish restaurant group will open in the Grade II-listed building Hepper House in Leeds on Friday 15 April. It will be the seventh site for the group.
Ibérica Restaurants managing director Marcos Fernandez Pardo said: "We hope to open a site in Glasgow late this summer and another before Christmas 2016 in Edinburgh.
"The company is looking for sites across the country. With a business plan that will take us to 10 sites, and we will continue to develop our pipeline after these 10 but no target number exists."
The Leeds restaurant will seat 123 covers over two floors, with the main restaurant situated on the ground floor, positioned beneath a lightwell, with a deli in the basement including a wine bar and seating area. A cocktail bar next to the main restaurant will offer visitors the chance to sit at the bar and enjoy a drink and pinchos through the night.
The menu, created by executive chef Nacho Manzano, focuses on seasonal produce, with dishes including Cachopo (fried beef & Iberico pork patty filled with asturian cheeses and mushrooms), Butifarra with Trinxat Catalan (catalonian sausage with mashed potato, cabbage and Spanish pancetta) and Ibérica classics such as Asparagus, manchego, onion confit and truffle oil toast, and fried chorizo lollipops with pear alioli sauce.
The group's senior chef team headed up by Manzano and group head chef César García have promoted Adrian Romanillos to the role of group sous chef. He has attended a familiarisation trip to Spain with Manzano to learn more about his dishes and his culture and step up to become part of the senior chef team and train more chefs internally.
