Karam Sethi planning two more restaurants

Karam Sethi, the chef and restaurateur behind Gymkhana, and Michelin-starred Trishna in London has revealed plans to open another two restaurants.

Sethi, who set up Trishna with his brother Jyotin in 2008, said they hoped to open another Indian restaurant on a similar level to Trishna and Gymkhana, alongside another more casual operation, although they have not yet found sites for either concept.

Besides the two Indian restaurants, Karam and Jyotin Sethi are already backers of London's hot dog and Champagne restaurant Bubbledogs, run by James Knappett and Sandia Chang, as well as a project in Copenhagen which they have launched with Claus Meyer, co-founder of Noma.

Karam Sethi said: "We have got a few things in the pipeline but it is all site-dependent and finding the right sites so we have got a big team of property agents on the lookout for us, but in terms of the way we are doing it, we are building a multi-dimensional restaurant business where we will have Indian restaurants which we will run, and then we tie up with really talented British or European chefs who need backing for their projects and back-end support for their projects which we can provide."

He and his brother, who has now left a career with Barclays to concentrate on the restaurants full-time, are also on the hunt for an operations manager.

"We have got a lot going on. We have got the three restaurants and then the project in Copenhagen, which we have done with Claus Meyer, which opened in early October. I have got another two concepts in mind - one casual and one more on a similar level to Trishna and Gymkhana."
