Kurt Zdesar plans three more restaurants in 2015

Restaurateur Kurt Zdesar (pictured) is poised to open another three London restaurants this year.

Zdesar, who runs Chotto Matte in Soho, and is about to open the 80-cover Bouillabaisse at 4 Mill Street off Oxford Street in what was Bo London, has three more sites lined up.

The sites, all of which are now confirmed, will be on Mortimer Street, Chiltern Street and Wimpole Street and each is expected to be a different concept, although no more details are currently available.

The move would mark a rapid expansion for Zdesar's restaurant interests. Formerly director of operations of Nobu in Europe, and a co-founder of Ping Pong, Zdesar opened Chotto Matte in 2014.

Meanwhile, Bouillabaisse will open in mid-June with the aim of bringing sustainable coastal cuisine to Mayfair.

The menu has been created by executive chef Jordan Sclare, most recently of Chotto Matte, and previously of Nobu London and Restaurant Gordon Ramsay.

Dishes at the restaurant, which has been inspired by Zdesar's conversations with fishing communities around the world, include: Hebridean langoustines with fresh basil and white balsamic reduction; snow crab cakes with garlic and herb salsa; and lobster ravioli.

Bouillabaisse is split over two floors and will feature a large chef's table for 20 guests that will lead into of an open kitchen on the lower ground floor.
