Restaurant group La Tasca is to attempt to refine leisure park dining with the launch of a new restaurant brand next year.
Sam & Maxie's will be a new bar, grill and smokehouse. The first restaurant will have 140 seats and a predicted average spend of £15.
It will have separate lunch and dinner menus, and staff will be trained to prepare signature dishes on site in smoke ovens.
La Tasca chief executive James Horler said: "We will be pitching in above the current offerings, because this is the way the casual dining market is moving in the UK."
Group turnover in the six months to 30 October increased 18.5% to £27m (2004: £22.7m). Pre-tax profit soared by 93%, from £1.4m last year to £2.7m in 2005.
