Mark Sargeant announces first solo restaurant ventures

Former Gordon Ramsay Holdings (GRH) chef Mark Sargeant is to open his first solo restaurant ventures in Folkestone, Kent, this June.

Rocksalt, the chef's first solo restaurant project since quitting GRH in 2009, will see Simon Dyer come on board as the head chef and the general manager will be Lorrain Abrams.

The two-floor site overlooking the harbour will feature a restaurant, bar, seated veranda and private dining room and the menu will be formed of local ingredients from the Kent coast with dishes including celeriac and smoked coley brandade, and josper-baked beets with red endive and Kentish blue.

Sargeant will also open a fish and chip shop in the same area, with a dining room and four adjoining bedrooms. The Smokehouse will offer classic fish & chips with mushy peas, with local sustainably caught seasonal fish from Folkestone.

Rocksalt will open Tuesday to Sunday for lunch and Tuesday to Saturday for dinner; the bar will remain open on Sunday evenings. The Smokehouse will open Tuesday to Sunday all day.
