Mark Sargeant latest chef to guest at Simon Hulstone's Elephant restaurant

Mark Sargeant is to take over the kitchens of the Elephant, Simon Hulstone's Michelin-starred restaurant in Torquay, for one night only on 1 April.

The collaboration marks the latest in the Guest Chef Series of takeovers for the site, which will see chefs and friends of Hulstone cook for one night each at his place. Piquet chef Allan Pickett is to kick off the series on 3 March.

Sargeant will make the most of Torquay's local produce for his seven-course menu, which will include smoked cod's roe, cultured butter, whipped pork fat, seaweed crackers and sourdough, pepper aged beef ‘tonnato', grilled asparagus, spring lamb rump, young vegetables and tarragon broth and April fool for dessert.

Hulstone commented: "[Sargeant] is a fantastic chef with bags of energy and enthusiasm for everything he puts his mind to. His food is exciting without being pretentious and I'm looking forward to seeing what he has in store for the Elephant."

Other chef collaborations are set to include Sam Moody, executive head chef at the Bath Priory on 13 May; Steve Drake, chef-proprietor of Drakes in Ripley on 16 June; Luke Tipping, chef-director at Simpsons in Edgbaston on 7 July; and Adam Bennett, executive chef at the Cross in Kenilworth, on 17 August.

Sargeant won National Chef of the Year in 2002, while Hulstone won the same accolade in 2008. Hulstone has represented the UK in the Bocuse d'Or twice and is a regular on the national and international cooking competition circuit.

Sargeant's career has included 13 years at Gordon Ramsay Holdings, and he was part of the team to secure three Michelin stars at Restaurant Gordon Ramsay in Chelsea. He also went on to win a star while head chef at Gordon Ramsay at Claridge's.

Since then, his businesses have included Rocksalt and the Smokehouse in Folkestone, Plum and Spilt Milk, GNH Bar, and Kiosk in London's Great North Eastern Hotel, and most recently the Duke William pub in Ickham, Kent.
