Massimo Bottura to launch third refectory in London

Three Michelin-starred Italian chef Massimo Bottura is launching a third refettorio (refectory) in London, according to The London Evening Standard.

Bottura's refettorios are community kitchens run by his non-profit organisation Food for Soul, offering meals made from surplus food to vulnerable people. He will be launching the latest site during The London Evening Standard's London Food Month in June, named Refettorio Felix after Felix Byam Shaw, the inspiration for the campaign which aims to tackle food waste and hunger.

The Felix Project charity will supply the ingredients, which otherwise would have ended up as waste, in the same way that Refettorio Ambrosiano used wasted food from the Milan Expo pavilions and Refettorio Gastromotiva used surplus food from the Olympic Village.

Bottura will also team up with a different British chef every day to produce free or heavily subsidised healthy meals for people who are struggling, and will teach two local cooks how to create more interesting meals with surplus food.

He told The London Evening Standard: "Chefs have risen to celebrity heights. I believe we can use these heights to illuminate the most pressing issues facing society today. Food for Soul works to create inclusive and beautiful spaces to promote wellbeing for those who are marginalised and often excluded from society.

"Chefs are invited to cook nutritious and healthy meals and demonstrate how ingredients from food waste can be nourishing."
