Matt Weedon joins Fox in Chipping Norton as head chef

Matt Weedon has been appointed head chef at Hook Norton Brewery's Fox Inn situated in Chipping Norton, Oxfordshire.

Weedon was appointed executive chef at Ellenborough Park near Cheltenham, Gloucestershire in May last year, however departed the hotel shortly after starting. In August he joined Farncombe Estate's Foxhill Manor in Broadway, Worcestershire as head chef.

Weedon won his first Michelin star as head chef of Glenapp Castle in Ayrshire in 2007. He then gained a Michelin star at Lords of the Manor in 2009 one year after taking over as head chef. In 2013 he joined the Fallowfields hotel in Oxfordshire as head chef, where he achieved three AA rosettes, and left 18 months later to take over the tenancy of the Lamb Inn near Witney in Oxfordshire with his wife for three years before joining Ellenborough Park.

Weedon said: "I'm excited to be joining the team at the Fox and looking forward to driving the food and service forward using the very best of local, quality suppliers to produce a menu fitting for our location here in the Cotswolds."

Hook Norton Brewery operations manager Gerard Winder added: "We have always strived to offer high quality, honest, locally sourced food and with Matt now on board we can really drive this forward and up a level. We have exciting plans with new menus and more beer and food matching"
