Michelin-starred chef Tom Kitchin to open second restaurant

Michelin-starred chef Tom Kitchin is set to launch a second restaurant in Edinburgh this summer.

The former Catey Newcomer award winner and chef patron of The Kitchin in Leith will open the Castle Terrace in the Scottish capital's city centre in July.

Chef patron of the new restaurant will be Dominic Jack, who met Kitchin at Gleneagles and has been working at The Kitchin for the past 18 months. He previously held positions at fine dining destinations across Europe including the three-Michelin-starred l'Arpège and Taillevent in Paris, as well as the Swissôtel in Istanbul where he was chef de cuisine.

Set beneath Edinburgh Castle, the Castle Terrace will be a 50-cover restaurant with a 10-seat private dining room. It will be managed by the team from The Kitchin, with restaurant manager Philippe Nublat and Michaela Kitchin overseeing front of house.

Jack's menu will mirror Kitchin's culinary ethos, using seasonal Scottish ingredients, with the average spend around £45 a head.

Kitchin told Caterersearch he had been looking for a second site for some time. "We wanted to make sure it was perfect. This site is great and it's at a different end of town so there will be no competition," he said.

"Dominic's as passionate about using seasonal Scottish produce as I am but his menu will be totally his. There will be none of my signature dishes on the menu."

Jack added: "There's certainly a market for something new in Edinburgh's city centre and with the strength of The Kitchin brand and the entire team behind me, I have a fantastic platform to launch from. The next few months will be a very exciting time for all of us."
