National Chef of the Year Freddie Forster to join Prescott & Conran's Boundary as head chef
Freddie Forster, the current National Chef of the Year, is to join Prescott & Conran's Boundary in east London as head chef.
Forster will join the Peter Prescott and Sir Terence Conran owned restaurant, café and hotel in Shoreditch on 23 July. He has left his position as head chef at Italian restaurant Nuovo in Essex's Buckhurst Hill.
Housed in a converted Victorian warehouse, the Boundary, which opened in 2008 as Prescott & Conran's first project, includes three restaurants and bars, 12 individually designed guest bedrooms, plus five suites, a food store and a bakery. The company also owns Lutyens on Fleet Street.
Forster, who is one of just four chefs to have won both the National Chef of the Year and the Roux Scholarship, will oversee the Boundary restaurant in the basement of the property as well as the rooftop from next summer.
Commenting on his new role, Forster said he was very excited to join Boundary. "Nouvo was never going to materialise into what I wanted it to but you have to be loyal to the people who help you even if it's detrimental to yourself," he said.
"But I am now at a point where I want to go further in my career and Boundary is a beautiful restaurant."
Forster's CV includes stints at Raymond Blanc's Le Manoir aux Quat'Saisons, Gordon Ramsay's Aubergine, Le Gavroche and the Ritz, as well as the three-Michelin-starred La Côte d'Or under the late Bernard Loiseau, the Sandy Lane Hotel in Barbados, and Le Royal Mirage Hotel in Dubai.
