New look for Set Café at Artist Residence, Brighton

The Set Cafe at the Artist Residence in Brighton is to undergo a refurbishment and introduction of a new format.

The space (pictured) currently serves cocktails, beers and small plates from the same kitchen as the Set restaurant, both of which operate adjacent to and in partnership with the 23-bedroom Artist Residence.

When it re-opens, the 20-24 cover space will also function as part of the Set, but will offer a dim sum-style, order slip-based breakfast which will be open to the general public rather than just hotel guests and offer takeaway service.

It will also offer a small plates brunch. Both offerings will use the same local produce as the tasting menus at the Set restaurant. "We're going to be reducing wastage, the amount of stock we get in, and also the levels of prep so that we can really concentrate on the restaurant side," said Dan Kenny, head chef and co-founder.

The Set will be closed for approximately a month from February next year to allow for the refurbishment of the café to create a contrasting, cosier appearance to the restaurant with soft furnishings, banquettes and a fireplace, which is being designed by Artist Residence.

Kenny launched the Set with fellow chef Semone Bonner in 2015, offering an ever-changing, seasonal tasting menu. Bonner left the business in March to take up a position with M Restaurants.
