New veggie fast-casual site Ethos set to open in September
A new vegetarian, fast-casual restaurant named Ethos is set to open near London's Oxford Circus this September.
The 74-cover, all-day, self-service restaurant is the brainchild of 26-year-old entrepreneur Jessica Kruger, and will offer a globally-inspired menu of meat-free, ethical and healthy options, in a 3,100 sq ft site. There will also be 12 seats outside, as well as takeaway dishes.
The interior has been designed by I Am Associates, and will feature indoor silver birch trees, floor-to-ceiling windows, and tones of white, blue and gold.
Explaining her idea, Kruger said: "Ethos was born out of my frustration at the lack of creative and exciting meat-free cuisine available on the high street and the repetitiveness of the dishes offered. I hope the restaurant reflects my passion to offer and share good, deliciously different food with everyone, in a friendly, open and inviting environment."
