Phil Howard and Thomas Kochs to back Perilla in north London

Chef Phil Howard of Elystan Street and Café Royal MD Thomas Kochs are backing a new restaurant being launched in north London.

Ben Marks and Matt Emmerson will launch Perilla, a 44-cover restaurant in Newington Green, with the help of the industry heavyweights in November.

The restaurant follows two London residencies last year at Palm 2 in Clapton and Platform 1 in Dulwich.

Marks, a former chef at Claridge's and the Square, both located in London's Mayfair; and Noma in Copenhagen, has created a seasonal menu of modern European dishes. These will include seaweed bread brushed with roasted lamb fat; roast kale with cod roe; fried duck egg with chopped mussels and parsley; cuttlefish bolognese; and preserved plum custard, and pears poached in wine and citrus.

Emmerson will oversee the front of house, having previously had experience at Polpo and Polpetto restaurants. He said: "We are incredibly excited to be opening Perilla. We want to bring our twist on fine dining out of expensive, traditional restaurants and make it accessible, affordable and informal."

The launch has been backed by Howard, Kochs and Martyn Nail, executive chef of Claridge's.
