Ramsay: cooking up a profit
The profit came despite losses of £800,000 from the closure in December 2003 of the Amaryllis restaurant in Glasgow's One Devonshire Gardens hotel. They do not include the Verre restaurant at the Dubai Hilton, where Ramsay operates as executive consultant chef. The biggest contribution came from the Michelin-starred Gordon Ramsay at ClaridgeÁ¢Â€Â™s restaurant, which more than doubled its pre-tax profits to Á‚£1.4m. RamsayÁ¢Â€Â™s UK empire also includes his eponymous three Michelin-star restaurant in Chelsea, the Boxwood CafÁƒÂ© at the Berkeley Hotel, Angela HartnettÁ¢Â€Â™s Michelin-starred Menu restaurant at the Connaught hotel and three venues run by Marcus Wareing Á¢Â€Â" Petrus at the Berkeley hotel, the Savoy Grill (each with one Michelin star) and the Banquette at the Savoy Grill. Ramsay has two new openings planned for this year Á¢Â€Â" Maze at the London Marriott Grosvenor Square hotel, and a yet-to-be-named restaurant at the new Conrad hotel near Ginza in Tokyo.
