What was your first job? Paper boy in the Black Forest
What was your first job in catering? At my parents' place, Hotel Pfaff. I was responsible for washing salad and "priesting" and filleting the trout
What do you do to relax? I like to run a bit and spend time with my son, Liam
What is your favourite prepared food product? All salumi
What is your favourite restaurant? La Chassonette in Arles, South of France. It's a slow food restaurant with a biodynamic garden that supplies the kitchen
Which person gave you the greatest inspiration? Marco Pierre White
What's your favourite hotel? Hotel Splendido in Portofino, Italy. I used to go there with my father and we always ate split, grilled langoustines with lemon and oil
What is your favourite drink? I like a really well made margarita
Which ingredient do you hate the most? Truffle oil, and any similar chemically infused products
Tell us a secret… I finish my risotto with acidulated butter, but I am not giving you the recipe!
What flavour combinations do you detest? Chocolate and banana
What is your favourite food/cuisine? Italian, of course. I love its fierce regionality, how proud people are of the way they do things in their village/town/city

If you had not gone into catering, where do you think you'd be now? I would be a tailor; I actually started tailoring school. Funny I should end up at Sartoria on Savile Row
