Restaurateur Will Ricker is planning a new organic steak restaurant in Westminster, London.

The man behind London's Cicada, E&O, Eight Over Eight and the Great Eastern Dining Room confirmed he had bought the freehold of the Westminster Inn for an undisclosed sum.

Australian-born Ricker said he planned to knock the building down and build an eight-storey apartment block incorporating a ground floor and basement steak restaurant called Prime 75.

The 80- to 90-seat restaurant and bar will serve a simple menu of six or seven dishes with steak, fish and vegetarian options served with potatoes, vegetables and salads. Ricker also hopes to incorporate a French-style indoor open grill.

"I chose to do steaks because I decided I had to do something different to show I wasn't a one-trick pony and because of the popularity of the Atkins diet," said Ricker.

Average spend at the restaurant, which is not expected to open for at least two years, will be £35-£40 a head with drinks.
