Roussillon Dessert Trophy finalists revealed

The finalists of this year's Wines of Roussillon Dessert Trophy have been announced.

Representatives from 1 Lombard Street, Galvin La Chapelle, Green's (all London) and Summer Lodge in Dorset, will battle it out for the ultimate accolade at a live cook-off at L'atelier des Chefs cooking school in London next month.

The victorious chef/sommelier pairing at the final on 25 October will enjoy a four-day course at Olivier Bajard's Ecole Internationale de Pâtisserie in Perpignan (for the chef), and a four-day trip to visit the producers of Roussillon's finest wines (for the sommelier).

The winning pair will also be entered into the Roussillon Dessert Trophy international final.

The finalists were selected after an initial paper judging round of dessert pairings by a panel including Costanzo Scala, head sommelier at Benares, and Benoit Blin, chef-pâtissier at Le Manoir aux Quat'Saisons.
