Roux finalist Sabrina Gidda is new chef at Bernardi's

Twice Roux Scholarship finalist Sabrina Gidda is to take over as head chef at new Italian restaurant Bernardi's, set to open in London's Marylebone this September.

Gidda, who reached the finals of the prestigious cooking competition in 2014 and 2015, has helped to develop the menu for the 120-cover new site on Seymour Street, and will be overseeing a brigade of 12 chefs when the venue opens later this year.

There will also be a 20-capacity bar serving a wide range of Italian wines and cocktails. All pastas and breads will be made in-house, with the latter baked in the restaurant's own dedicated bread oven.

Speaking to The Caterer, Gidda said: "I am very excited to be a part of Bernardi's. It is a wonderful opportunity to be involved in the opening of a great neighbourhood restaurant like this. We will be sourcing some great ingredients from our suppliers and I am very much looking forward to cooking with my new team in the new kitchen. It was a real joy to be approached to join the team and I am looking forward to the opening."

She also confirmed that she would be focusing on the restaurant for the foreseeable future so would not be entering the Roux Scholarship again soon, but said it was a great competition to be involved in - both for the learning experience and the people it had allowed her to meet - and wished all competitors luck.
