Royal Opera House to launch new afternoon tea
The tea has been created by pastry chef Claire Clark, whose previous experience includes five years with Thomas Keller at the French Laundry in the US. Her menu design aims to highlight traditional British recipes and childhood classics, and present them in an innovative way.
The selection will include a Severn & Wye smoked salmon blini, a salt beef, cornichon and sweet mustard sandwich, a Royal Opera House "GÁ¢teau Opéra", a banoffee macaron, a pistachio éclair with praline grains, and some freshly baked scones with jam and Dorset clotted cream.
Available to the public without the need to buy a performance ticket, it will be served under the building's historic glass-vaulted hall. An expert will be on hand to explain the restaurant's display of props from past stage shows, while pianists from the Royal Ballet will play classical music.
The tea will cost £37.50, or £47.50 with a glass of Ruinart Champagne. Booking for the tea opens on Monday 28 July, with reservation times starting from Wednesday 17 September.
Company of Cooks announced its seven-year £52m deal with the Royal Opera House in 2009.
