Salt Yard Group reveals plans for fourth London restaurant

Salt Yard Group co-founder Simon Mullins has revealed plans to open a fourth London restaurant with a new site confirmed in Soho.

The new site on 60/61 Berwick Street will open in November as a 90-cover restaurant featuring a menu devised by chef director Ben Tish.

The food at the yet-to-be named restaurant will be the fourth restaurant to be opened by the Salt Yard Group, which counts Salt Yard, Dehesa and the Opera Tavern on its portfolio.

Inspired by Basque and Italian methods of smoking and grilling over charcoal that are prevalent across Tuscany and Piedmont, Tish's menu will be almost entirely cooked on a custom built charcoal fired grill, which will be the centre piece of the open plan kitchen.

Sample dishes include: homemade chorizo; smoked oysters, lardo and chilli; Bistecca Fiorentina to share; salt crust sea bass with orange butter; whole iberico pork rack with chestnut honey; and grilled Iberico Presa, whipped jamon butter and lemon.

Grilled Courgettes, raw fennel, Parmesan and watercress and smoked milk ice cream with pears in Moscato Rosa will also feature.
