Scottish chef Stuart Ralston to launch New York-inspired concept

Stuart Ralston, chef-patron of Aizle, Edinburgh, will launch New York-inspired concept Noto next month.

Named for noted New York eccentric Bob Noto, who took Ralston under his wing during his time in the city, the 40-cover restaurant on Thistle Street will offer a range of small and large plate dishes with Asian influences, alongside brunch and daily specials.

Ralston, who introduced a four-day working week for his team to allow for work-life balance among staff, has limited all-day à la carte dining at the site from Wednesday to Sunday.

The chef's background in New York includes two years at Gordon Ramsay at the London, during the world-famous British chef's two-year tenure associated with the US site.
