Simon Gregory appointed executive chef of Ace Hotel London

Ace Hotel London Shoreditch has confirmed that Simon Gregory, former group executive chef at the Gordon Ramsay Group (GRG), is to join the property.

He will take over as executive chef of the 265-bedroom hotel and Hoi Polloi brasserie next month. The Caterer reported in June that Gregory was expected to join Ace after leaving GRG, where he has spent 11 years. He was appointed group executive chef of GRG in April 2011.

As well as overseeing the kitchen of the al-day dining brasserie, Hoi Polloi - operated by David Waddington and Pablo Flack, the creators behind the Bistrotheque restaurant - Gregory will also be responsible for the newly opened 7th Floor private dining and event spaces.

The Ace hotel launched in September last year, after being converted from a former Crowne Plaza property, as the first overseas outpost of the US-based style-led brand.
