The Bingham, a restaurant with rooms in Richmond upon Thames, has appointed James Stillwell as sommelier. He joins the Bingham from the Dorchester Collection, having worked in London at the Dorchester Hotel and more recently at Coworth Park, where he had been sommelier since it opened in August last year. Originally from Cornwall, Stillwell trained in Switzerland at the Glion Institute of Higher Education in Montreux. He has also worked in the Star Castle hotel in the Isles of Scilly and been a stagiaire in China.
