Toby Stuart joins Village London as executive chef
Village London has named Toby Stuart as executive chef, overseeing the food for its London venues: Village East, the Riding House Cafe and The Garrison.
Stuart joins the restaurant group from Roux at Parliament Square, the Westminster restaurant, which is part of contract caterer Compass Group's fine-dining division Restaurant Associates and in association with Michel Roux Jr.
Prior to that Stuart worked at the one-Michelin-starred Galvin at Windows at the London Hilton Hotel, Park Lane where he was senior sous chef.
He has also worked in a number of Michelin-starred establishments in the UK and France including the Square, L'Escargot, Auberge du Lac, Maison Troisgrois, Can Fabes, Orrery and Cliveden.
His career began in 1997 with work experience at Aubergine.
Stuart was succeeded at Roux at Parliament Square by former Masterchef: the Professionals winner Steve Groves, who stepped up to the role from his previous position at the restaurant as sous chef.
